On the Sky Demon Airfield plate why is the main runway of Stapleford (EGSG) coloured red? 
I cannot see this on any other airfield.

Could be because it’s mixed grass/tarmac

Staplefords’ runway 21L is indeed a ‘mixed’ surface. Could it be illustrated as Hard surface becoming a Grass surface where it actually changes?
